kokomo’s

One of the “fine dining” establishments in The Mirage, kokomo’s is a restaurant that specializes in steak and seafood. Set in a tropical “forest” in the midst of the hotel, the restaurant has a ceiling that is all a skylight and an open/welcoming environment.

At the time of our visit the restaurant was featuring a special prix fixe tasting menu. Each person could eat for just $29.99. I was momentarily scared that the portion sizes may not be that satisfying simply due to the fact that it was a “tasting” menu and it was so cheap compared to every other price on the menu. But that wasn’t the case, we were definitely satisfied.

SN850419 The bread basket came with several different offerings: parmesan crackers, rosemary rolls and olive rolls. The olive rolls were not my thing, filled with plenty of kalamata olives which I do not like. The crackers tasted a lot like flour, but they were still okay. The rosemary rolls were really tasty though, even if the pretzel salt on the top was a little overpowering.

We had our choice of 3 items for appetizers. Kevin selected the panko crusted crab cake. It was served on top of a sauce with a nice spice to it and had cabbage on top. I chose the salad of roasted carrots, endive, pecans & orange vinaigrette. The flavors really exploded when you got a little bit of each item all together, really tasty combo. (The 3rd option available was a wild mushroom pot pie.)

For our entrees, Kevin chose the Surf & Turf combo. It was a 6oz. Beef Tenderloin with a giant garlic shrimp, sour cream potatoes & buttered green beans. I opted for the tomato & goat cheese stuffed chicken with sautéed spinach & herb reduction. Both selections were really great. The spinach was a little bitter in mine, but the sauce more than made up for that. (3rd entree selection available was a macadamia crusted seafood of the day.)

There were only two options available for dessert, so of course we had to get one of each. Kevin ordered the salted butterscotch custard with chantilly cream and caramel sauce. It was really good, I love the combination of saltiness and caramel. I chose the 12-layer chocolate cake with raspberries. It was a really dense and fudgy cake, super rich and very tasty.

They probably hated us, seeing as we were most likely the cheapest table in the joint that night… no booze, no dessert coffee, tasting menu… but that’s okay. We enjoyed our meal and had a nice evening.

Mini’s Cupcakes

Mini's CupcakesThis past weekend I went to Salt Lake City and wanted to try a cupcake shop while there. I didn’t have a lot of time, as this was a pretty quick up-and-back trip, so I only got to visit one shop, the one closest to my hotel. That shop was Mini’s Cupcakes.

Mini’s Cupcakes only sells mini cupcakes. (Whoa… imagine that!) They also sell some lunch items, although I’m not sure if that will continue when they open their planned cafe next door. Their “boxed lunches” come with a 1/2 sandwich, salad or soup and a cupcake for dessert. All of their sandwiches sounded awesome.

The cupcakes are $2 a pop, a little pricey for a miniature cupcake. And their seasonal flavors are an extra quarter, making them $2.25 each. They have specialty flavors each weekday as well.

I split two different flavors with my mom while at the shop. It was convenient that they had plenty of space to sit down and enjoy your treat. They didn’t have any knives out to split the cupcakes though. I perhaps should have asked if they had any, but I will be honest and say that these were the messiest cupcakes I’ve ever eaten. Perhaps I should have gotten one with a buttercream, that would have probably been a little more “solid” in terms of frosting.

This cupcake was really tasty. The chocolate cake was moist and flavorful and the frosting had excellent marshmallow flavor that really came through. The frosting was very soft and sticky, thus I felt like a little kid with food all over my fingers after eating it. But the flavor definitely made it worth the mess (and about 14 napkins it took to remove the stickiness from my hands.)

We ate this one second, because I LOVE lemon and was really anticipating it. I found the cake a little drier than I would have liked, but the lemon curd on the inside really helped counter that. The frosting was the star here, the richer and deeper flavor than a traditional meringue complemented the lemon so well. Again, a super messy cupcake that wasn’t really easy to split. Somehow, we did manage to share though!

Mini'sI love that the shop gets their baking supplies from local sources and that they don’t use shortening. The owner was super friendly and took the time to chat with me about their business and made sure I got a menu that outlined their options and the local sources. (Seriously, they get flour, eggs, butter, sugar and even chevre from vendors all around the northern Utah / southern Idaho area… that’s so cool!)

I had the idea in my head that I could stop by after the play I was seeing that afternoon and get some more flavors to bring home with me (whatever they may have had left at the close of the business day), but by the time we got out of the theatre and back to the car, it was about 20 minutes after Mini’s closed. So I didn’t get the opportunity to sample more. But they definitely had other flavors that were tempting to me!
