For some reason I have always harbored a desire to visit Greece. It’s probably from various books, both non-fiction and fiction, that make the place sound like such a paradise, but this is high on my dream vacation list. The ancient civilizations, all the god/goddess mythology that came from the region, the interesting way the homes are built into the hills, the crystal blue waters… the place sounds intriguing and a little like heaven on earth. - Aruba
Maybe the Beach Boys have something to with my desire to visit this island (Damn them and that catchy ‘Kokomo’ song!) but this is high on my island vacation dream list. Oh sure, I’d take just about any island vacation if someone was offering, but this one just sounds more exotic to me. - Costa Rica
Ever since I read an article in Shape magazine a few years ago talking about the treks through the rain forest, the crazy wildlife just waiting to be photographed and the beaches… it has lingered in my mind. Of course, tourism is picking up in that location from what I understand so the chances of having a more obscure vacation is dwindling the longer I put it off, but I guess that’s the way life goes. - Yellowstone
Okay, it’s not really exotic. And I’ve actually been to the park before, when I was 12 or 13 with my family. The park was very much charred after all the big fires that ripped through the area in the late 80′s and I would like to see it again now that it has had time to recuperate longer. Plus, I would like to experience this with my husband. And without camping… I’d prefer to stay in a hotel room this time. Man, I’ve turned into such a princess.

Well, yesterday sucked because the countertop crew was here all day. Oh… it was a good thing that they were here because that means that my countertops are all fixed. But it meant that all day I had loud construction sounds echoing through my house, strange chemical smells permeating the air and dust flying everywhere. It took me three hours just to get all of the dust they created cleared off the countertops, the cabinets and the floor in the kitchen.
I was so exhausted by that point, I had worked continually from 6:00 AM until 4:30 PM (I had to pack a lunch to work in my home office because the kitchen was encased in plastic sheets and filled with non-english speaking construction workers) and then cleaned until 7:30 PM. I was ready to tip over and/or die. I think I actually made it until 8:30 before I headed up to bed. But then the spouse had to come ask if it was recycle day and if he could put out the recycling. Because that’s exciting! (I’m glad he asked, if we hadn’t put it out then it would have piled up too much and since we’re so diligent about sorting, we end up with bigger recycling piles than we do regular garbage piles a lot.)
The most exciting thing is I was able to cook dinner tonight. I made a Cashew Cod recipe that I got from Self magazine and a spinach salad with strawberries and baby bella mushrooms. It tasted so good to have a real meal that wasn’t something cobbled together from convenience foods. Of course, the next time I make the recipe I have to alter it, I can’t just leave a recipe alone. I have to tweak it and make it my own. It needed more seasoning. I think I’ll try Old Bay.
I have a huge stack of recipes that I want to try. Being without a kitchen for so long has been driving me bonkers! Of course, to be able to truly cook with ease I need to move back into my kitchen and I’m still hesitant to move in completely until the crew comes next week to finish the molding and trim work.
