Happy Nevada Day

Today is Nevada Day. Or tomorrow is Nevada Day. Or yesterday was Nevada Day. Not really sure. Hang on…

Hmmm. I’m not sure. Nevada Day is supposed to be a celebration of Nevada’s admission to the union. The date that happened was on October 31. But Nevada Day celebrations seem to span the weekend. Maybe there isn’t a specific day for Nevada Day. It’s just a series of days but we refer to it in the singular? There are a bunch of activities happening in Carson City for Nevada Day. Parades, pancake breakfasts, chilli feeds and beard contests. Yes, it sounds like they really party hard there in Carson City.

But here in The Vegas? I don’t really know. I do know that the schools were closed for the holiday. Several retailers are having Nevada Day sales, so maybe us Las Vegans are supposed to celebrate by buying furniture.

So, however you celebrate Nevada Day, whether it be buying a recliner or measuring your facial hair, have a splendid day.

Best Snack Ever

I eat yogurt every day for a mid-morning snack. Yogurt is good for you in so many ways: calcium, protein, live-cultures, etc. I don’t eat the commercially flavored yogurts because they all contain high-fructose corn syrup and that goes against my food standards. I used to search high and low to find yogurt that was sweetened with splenda or aspartame or something like that for the work day.

Now that I work at home I have a little more flexibility in my mid-morning snack. The yogurt doesn’t have to fit into a convenient to carry container to be stashed in the desk or office refrigerator anymore because I have my whole kitchen downstairs. I prefer more natural foods and many items that are convenient aren’t always the most healthful options. Since working out of the home I have been nuking frozen fruits just long enough to soften them and mixing them with plain non-fat yogurt. (Mountain High is my personal favorite.)

Last week I steamed and pureed a butternut squash and seasoned it with cinnamon, ginger, nutmeg and allspice. The hubby doesn’t care for squash much, so most of this butternut squash puree was mine to eat. This week I decided to mix butternut squash with yogurt for the mid-morning snack.

I just want to say, BEST SNACK EVER. It is so good. Sprinkle it with a little toasted wheat germ, it’s seriously like a dessert. So good…
